Stuffed Corn Bread

350°F

10” Dutch oven

  • 1½ cups yellow corn meal
  • 1½ cups all purpose flour
  • ¾ cup sugar
  • 2 tablespoons baking powder
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 2 eggs, beaten

Grease 10” Dutch oven. Mix above ingredients and pour 1/2 of mixture into Dutch oven.

Stuffing:

  • 1½ cups small curd cottage cheese with chives
  • 1 small jar red pimentos, drained

Mix stuffing ingredients together and pour over corn bread mixture.

Pour remaining corn bread mixture over stuffing mixture.

Bake for 25 minutes or until top is golden brown.
