 High Desert “Rubbed” Pot Roast

325°F

12" Dutch oven

 

  • 4 pound beef pot roast
  • ¼ cup vegetable oil
  • 2 cups water
  • 3 yellow or Vidalia onions, quartered
  • 6 carrots, diced
  • 5 medium potatoes, cut into 2 inch chunks 
High Desert Rub Mix:
  • ¼ cup paprika
  • ¼ cup Lawry's Garlic Salt with Parsley®
  • ¼ cup poultry seasoning
  • ¼ cup seasoning salt

 Rub "High Desert Rub" mix over roast. Heat oil in skillet. Place roast in oven, brown on all sides.Add water and onions, cook for 1½ hours.Add carrots and potatoes, cook for 1 hour.
